註:披薩常用的起司有馬茲瑞拉,帕梅善 ,瑞可塔,普羅沃羅,羅馬諾,芳提娜,菲達,艾斯阿格…等
Note : Common cheeses for pizza are Mozzarella , Parmesan, Ricotta, Provolone, Romano, Fontina, Feta, Asiago…etc.
做法
1. | 剝去義大利香腸外衣再掰成小塊。鍋燒熱後放進香腸,用中火將香腸炒碎及成金黃色。撈出濾乾,放在一旁待涼。 |
2. | 將烤石放在烤箱最下層,並預熱到最高溫(我用循環555°F(290°C))。 |
3. | 工作檯撒些麵粉,將麵團擀成12" (30cm)圓片,不圓沒有關係。 |
4. | 披薩木鏟上預撒2大匙玉米粉,再麵片移轉到木鏟上(如果沒有木鏟,可用烤盤背面替代)。 |
5. | 用手指尖捏/推高麵片邊緣。此步驟可以省略。 |
6. | 將橄欖油均勻地塗在麵皮上。再塗上紅醬。 |
7. | 依序均勻地放上1杯起司,香腸,洋菇,紅洋蔥,蔥粒,1/2杯起司和黑胡椒。邊緣留1" (2.5cm)空白。 |
8. | 用塑膠刮刀沿著麵皮底部刮一圈,讓麵皮不沾粘在木鏟上。然後輕輕地晃動木鏟讓麵皮移動。 |
9. | 迅速將披薩推進烤箱到烤石上。烤約5分鐘(請根據你的烤箱性能自行調整溫度)。 |
10. | 取出披薩等三分鐘後再切。 |
PROCEDURE
1. | Remove the sausage casing and tear them into small pieces. Brown the sausage over medium heat in a heated pan. Break the sausage with a spatula into large dice size. Use a slotted spoon to drain and transfer the sausage to a bowl. Set it aside to cool down. |
2. | Place the baking stone on the bottom rack of the oven. Preheat the oven to the highest temperature. (I use convection 555°F(290°C))。 |
3. | Flour your working space and roll out the dough into a 12" (30cm) disk. It is not necessary to be a perfect circle. |
4. | Transfer the crust dough onto the pizza peel that is pre-floured with corn meal. If you don't have a pizza peel, use the back of a baking pan instead. |
5. | Use your finger tips to pinch/push the edge of the crust up all the way around. You can skip this step. |
6. | Brush the olive oil all over the crust, then spread the red sauce. |
7. | Place the toppings in the order of 1 cup of cheese, sausage, mushroom, red onion, scallion, ½ cup of cheese and black pepper. Leave 1" of the edge blank. |
8. | Use a plastic scraper to scrape along the edges of the crust so the bottom of the crust won't stick to the pizza peel. Then gently shake the pizza peel to make the pizza move. |
9. | Quickly slide your pizza onto the baking stone and bake for 5 minutes (Please adjust your time according to your oven function.). |
10. | Remove the pizza from the oven and wait for 3 minutes before cutting it into slices. |
